If complete tranquillity is your desire, nothing but birdsong disturbs the peace of Villa Fabio, situated as it is in the green and wooded heart of Italy. The solid, handsome house was built as a farmhouse by a wealthy landowner some five centuries back, and has weathered the tergiversations of history as battles have been fought by the luminaries of the Italian renaissance backwards and forwards laying claim to the surrounding cities.
The surrounding area has numerous underground water-courses whose arteries cascade in the geological strata beneath your feet. With this in mind we have preserved the old buttery, a stone building in which there is a water trough, which was used to preserve butter and cheese and to keep them cool in summer. In winter, filled with snow, the building became an ice house, a primitive freezer, used to keep all kinds of food from going bad.
